Brewery Vivant joins forces with Colorado brewery

East Hills' Brewery Vivant continues to make headlines. The brewery gave all their profits from this Monday's sales back to their employees, and now have announced they will partner with the Fort Collins, Colo.-based New Belgium Brewing Co. on a new beer, Escoffer.

According to excerpts from the article in MLive:

The beer, a collaboration made possible after Vivant’s recent doubling of production capacity with new fermentation tanks, will be a high-gravity, 9.5 percent alcohol by volume Belgian style amber beer brewed with two yeast strains.

The brewers used house yeast from Vivant for primary fermentation and then aged the beer with a wild yeast from New Belgium called Brettanomyces Bruxellensis. The result will be a dry, “kind of funky” amber beer, said Spaulding.
